When you change sound programs on most synths, any notes you’re holding at that moment get cut off. Kurzweil’s K2000 and its successors were notable exceptions to this status quo; road warriors loved the ability to sound-hunt while maintaining a chord that didn’t go away until they let up on the keys or sustain pedal.
